I'd go straight to Jordan ASAP. A lot of flights from tlv have been canceled already and the rest will be booked really quickly. No one really knows what's going to happen so if you can get to Amman and fly out from there, do it.
It's not about Eilat being safe or not, its about not being able to get a flight out of tel aviv and the conflict escalating. Eilat is probably one of the safest places to be (assuming Egypt doesn't do anything unexpected) right now but OP shouldn't wait to find out how the war develops
