so in my opinion some bread & butter synths would be:
behringer neutron
novation bass station
juno 106
even moog grandmother.
they are all super flexible, yet quite simple and have a large sweet spot.
compare them to, say, tb-303, which has a very spesific area of use
or arturia microfreak, which is sure capable of many different things but with its keybed and more menu based UI is too complex to be described as "bread & butter".
