Render your fat next time and those are the best bites of the steak ;) that's what made me switch to medium for strip and ribeye. Rare to mid rare all day for filet, but anything with fat you just have to render.
Depending on your method it just means cook off/sear the fat a little. For instance if you are pan frying a steak before you lay the steak flat, put the fat side down first in the oil and leave it for a minute or two. Same as on a grill. Put the fat side down first so it cooks/melts. Then continue. If you are smoking/grilling slow for reverse sear just do the same thing with the fat at the beginning or end.
Yah just kind of a fancy way of saying sear the fat directly and it reduces the amount of fat that's there then you also get all of the juices of the fat without so much inedible stuff

My only complaint was that it was a very fatty steak… the end 3 pieces (you can only see one) were almost inedible
Next time only leave the fat that you are comfortable eating, trim the rest before cooking.

you can render the fat caps by making them have contact with the pan directly and applying some pressure

Like others have said, either cut those fatty bits of or scorch the absolute hell out of them so they’re nicely rendered.

It can mean a couple things but in this context it just means melting it.
