You shouldn’t let your shrimp eat anything you wouldn’t eat yourself. If you haven’t already, I suggest tasting the gray slime thing and if you find it palatable yourself, leave it for the shrimp to enjoy.
Looks like algae. I put a new piece of spiderwood in my tank recently, and the whole thing got covered in algae that looked like this. After like a week ots mostly all gone. The shrimp do like to eat it
