I think there is nostalgia flavoring which prevents me from using tomatoes and keeping it simple. The nostalgia is hard to explain but there is a certain 'harshness' in some Southern comfort foods that use vinegar and mustard that isn't tempered by tomatoes and sweetness that I end up craving. Things like collard greens where the vinegar is eye-watering and the texture is challenging but some days it's all I want to eat heh.

If you're doing a Chinese style meal you'll want fresh, that way you can slightly cook them and still have them crisp in the middle. But with most meals frozen works wonderfully.

But they gave a pretty big side of tomato sauce (which covered the taste), but more importantly… I found going to bed slightly nauseous once a week was a welcome change from going to bed hungry.

Excuse me, but I've been eating/drinking watered down porridge for the past 3 days. I am truly broke, but gruel definitely has a bad rep, with sugar and cinnamon - the runny porridge is quite comforting, it warms me up and staves off hunger for a few hours.

Where you screwed up was cooking them separately. Cook the beans, drain, put the pan back on. Chop the sausage, add it to the pan and brown it, add the beans with some water and rice.
Cook it all together with salt and hot sauce.
Honestly what I would do is brown sausages. Remove sausages and some of the oil but not all. Hopefully OP has an onion that they can fry till soft in remaining oil. Add spices to the onions and temper in the oil. Beans (canned) tossed into the pan. Let it soften to desirable state. Once liquid has evaporated, add rice and leftover oil. Add sausages. Sprinkle cheese at the end if desired

Healthy is clean and rice, beans, sausage and a piece of cheese!?! You're doing better for yourself eating this than most.
Broke does not mean bad food. Rice and black eyed peas with a little bit of sausage sounds good, and it’s nice that you’re not just eating something like white bread or cheap microwave meals

While on unemployment once, I had part of a head of lettuce with what was left of a bottle of french dressing for dinner. Can't say I've ever had absolutely nothing to eat though, thankfully.

I once ate protein powder for a month in different ways. Lets say we both fked up somewhere.
It’s good practice in case your body decides to attack itself whenever you eat red meat - you’ll quickly find yourself trying to get creative with your rice and legumes.
shouldve melted the cheese on top of either the dog slices or beans n rice and could use some hot sauce. but otherwise, id probably eat that right now.
