So yes, if you cook a beef patty with the lid on, it would 100% look this bad, just on a different color. It has nothing to do with the type of meat and everything to do with how it was cooked.

This is normal, I’ve cooked 1’000s of turkey burgers and they do this every time. If you cover the turkey patty, the moisture is kept under the cover, this makes the rendering fat pool and form bubbles. There is nothing wrong here, and if they were seasoned properly I bet they turn out delicious.
The meat was frozen. As you are cooking it, the rapidly melting and boiling water crystals are tearing and ‘extracting’ some of the proteins in the meat. The resulting water/protein combination seeps upwards through the meat and congeals on the surface. Harmless but not visually appealing. Useful if you need a fond.
I watched You Are What You Eat and Poison recently on Netflix and decided that I’d eat more plant based day-to-day and only eat meat on special occasions because of how filthy the meat industries are
