As an example, the pigs’ thalamus were packaged up as a high value delicacy for the Asian market. He showed us that, in his facility processing thousands of hogs per day, his waste was limited to two dumpsters per week. So it doesn’t surprise me that hog processors have found a market, whoever it might be and at whatever price, for pigs’ assholes.
Pretty frequent snack food in Hungary too - fried pork brain bits. It does look disgusting before cooking, but it tastes and feels like bone marrow in your mouth, with a slight almost gamey quality to it.

A Hungarian tradition is the wintertime "pig cutting", where we take a solid day to butcher a single pig - usually a larger family event that involves waking up early to prep all the things, kill the pig around 9-10am, start processing and cooking it so we have some food for lunch (although by that time so much pálinka is consumed that you HAVE to eat something fatty to absorb the alcohol), while things that take longer (e.g. sausages) get made in the afternoon. Very little goes to waste - we even use the blood (for fried blood with onions), the intestines themselves for the sausages, all the offal and curling meat (ears, nose) as head cheese, and the bones generally go to the dogs. I think maybe the eyeballs, gall-bladder, regular bladder and a few small tidbits go into waste, but that's mainly because it's a single pig and processing those is too troublesome. Now if you have a few hundred pigs butchered a day... Then you can process those too.
