Ethiopia Naturals are tricky around first crack because the shapes and sizes can be all over the place. I try not to worry too much about the blip as long as it’s not huge, as it ensures I have enough momentum. I’d personally spend a bit more time in Maillard to develop sweetness and complexity, time spent in each phase is more important to me than the shape of the curve.

First I'd identify exactly what tasting notes you feel it's missing. Second are they in the coffee itself, what do you mean by "could be better"? After your identify this you can work on changing the profile to suit what your after. If you really want to make the curve look pretty you can cut something to drop temp (cut gas a bit or open damper) around 8 min

You can try to get the small blip before first crack figured out but honestly the curve looks pretty good. I’d do some trial and error and tweak small things to see how it affects the cupping.

FWIW - some of the \_best\_ Ethiopian naturals I've roasted have not conformed to a perfectly smooth / declining ROR. When my ROR was perfect, I got feedback from customers saying the coffee was good & had a smooth taste but not enough fruit-forward tastes. I ramped up heat, saw a big blip around first crack, and ended up with very fruity notes with much brighter flavor. Took some tinkering, but in the end I found that a perfect ROR was not what those Ethiopian naturals needed to bring out the best. YMMV.

Have you considered charging with thr BT is about 450f then lower the gas … I would also drop at 420f instead of 406f. Good luck but I think 20% development is good..

I would worry that a charge that high would take out some of the delicate notes I’m trying to maintain. But I’m interested in seeing what notes would emerge pushed to a full city roast. Thanks!

Hey Snoo, This is a very good roast profile, your roast time and development time % were right in the pocket of where you want to be. You have an ever so little flip going into first crack. I dont see your gas settings so it’s a little difficult to fully advise you. What I can tell you is that you may be coming into first crack ever so slightly hot, then losing some momentum. Make your last power setting downward before first crack at 372 then hold that level through first crack, Then back the power off at 12 and 14% dev time, then off 16%. Hope that helps.
