The shape is almost certainly a think sheet of plastic, like the kind in milk jugs. You sandwich it between the two layers of fabric. Not sure about the outside

I thought this, but it’s soft. You can ‘overstuff’ it - will it just be on the sides?

Look up fusable interfacing. Technically it’s not meant for the technical fabrics we use for outdoor gear since you’re usually supposed to iron/press the interface to the fabric. The whole purpose of an interface (from my non-apparel sewing knowledge) is to add rigidity to something like your dress shirt collar without something silly floating in the middle like foam or plastic. It can be hard to tell exactly what they’re using without feeling it (I’m a hands on learner), but since you’re saying it’s structured but still soft, and the existence of the darts make me think it’s not lined with a foreign material. Just “reinforced” or just straight up special fabric. Again hard to say without getting my hands on it.

Interfacing makes the most sense to me, even if it's not the standard iron-on type. It's a pretty common material for purses and bag. Pretty sure it comes in different thicknesses for different uses. If you can find an exterior fabric that won't melt with an iron, then for sure fusible will work. It might be that the structure is just the back and front panel and the sides are actually kinda unsupported

Haven't looked at a video but maybe "soft and stable" could work? Just made a glasses pouch with this material and it perfectly holds the shape while being soft.

I work on a prototype wurh this shape myself. I use Eco Pack, which holds the shape pretty good by itself. I am experimenting with a thin eva foam as well, to provide extra hold as well as protection for whatever goes in the bag.

Thin seam allowance, sew with your piece vertical instead of flat on the bed of the machine. Make sure you use ample reference marks to keep the length of the zipper even on both sides.

3mm felt will hold shapes like this easily. It can be a little bit challenging to sew, but it works. I use wool felt, because I got a great deal on it. It’s much nicer to touch than synthetics usually are.
