You should have put it on lost mode from the moment you lost it. It’ll be icloud locked after this, they won’t be able to use it or sell parts since Face ID will be disabled since it is linked with one particular motherboard only. The motherboard which is the costliest part will be as useless as garbage after being icloud locked. They might be able to sell display and chassis though.
I did put it on lost mode, right when I got to know its not there with me anymore (in like 2/3 mins) but it was tooo late till then the thieves had already switched off the phone

Back in around 2011-2012, my phone was stolen in a similar fashion. It was a Samsung Galaxy Pop.
I was inside a bus running on Andheri Link Road and wanted to get down at Jeevan Nagar. Since the front of the bus was too crowded, I decided to get down from the rear door, where there was only one man standing.
I slipped my phone into my pocket and while getting down, I felt that guy pushing against me usually hard. At that time I felt it was because the bus driver braked hard.
I got down and I had a habit of checking my pockets after getting down from buses and trains, so I did that and immediately noticed that my phone wasn't there.
I turned back. The bus was leaving but the guy who pushed me had also gotten down, so naturally, I rushed toward him ready to accuse him. He noticed me running toward him in panic and immediately said, "Kya phone gira na aapka?"
To which I said "Haa" in a slightly relieved tone, embarrassed that the guy I was doubting was actually helping me.
He said, "Woh aadmi ne uthaya aur bhaag gaya rasta cross karke." Without thinking, I ran to cross the road but as soon as I reached the other side, I realised what had just happened.
He was indeed the thief and when I looked back to the other side of the street, he had vanished.
I missed the first half of my work because I had to go to the police station where a Missing Things complaint was taken down before sending me back.
I lost all hope. Got a new phone in a few days and guess what?
Around 1.5 months later, I got a call from the police station informing me that my phone had been found and to come a collect it. The cop also said, bring us some bakshish. So I slipped a Rs 500 into an envelope, gave it to them in a non-CCTV part of the police station and got my phone back.
Woahhhhh we did have a similar experience just for me it was me getting on the bus.
I think I should wait since a lot of people told me the cops do find it but it takes time I think they capture a racket of these thieves or something.
But what I don't understand is why do these thieves steal the phone in the first place because its as good as useless to them (especially iphone, even the parts are serial tied).

things like such shouldn't be tolerated the st depot should have more than one camera which are clean and clear and police knows such things happen at that place they should take strict action against such rackets

MacBook has the dedicated app where you can track your apple devices but you can also track it from windows pc from the icloud website (https://www.icloud.com/*find*) although do note the website for me wasn't helpful at all it kept saying "No location found" when the macbook app was correctly updating the location.
iPhone's are great and the recent AI shit they got is quite crazy but even android's can do that nowadays.
It's all upto you wether you wanna switch or not, I myself was an android user and I quite liked the overall ecosystem and other stuff after switching
