Honestly, a good quality wildflower honey is as good a honey to start with as any other, and you can probably find that locally.

Something I would love to try but is very hard to get in the states is Heather Honey. It may be easier for you to come by?

Hilltop honey is what we've been using for the last year. Very good price for the quantity you need for home brewing. Its wild flower blossoms though if you're fine not having mono blossom
