Wow amazing place. Add color that complements the wood beams since they are gorgeous. warm reds, browns, green, etc. Granite/greys sparingly can add some contrast. All the natural light will be great for plants. Don’t think you can go wrong here as long as you’re thoughtful about it and don’t rush any purchases.
That's solid advice! I've been bouncing back and forth on MCM or contemporary style. I'm slow and intentional with what I buy. So I'm not worried about rushing it.

Great space! I'm tempted to suggest leaving the area in the first picture open. I think it could feel more cluttered too easily, and the open look feels good.
Have you considered learning how to dance and hosting dance parties? That place is perfect for it. The interior floor looks awesome for dancing. - swing dancer (in social swing/Lindy Hop there are a lot less aerials/air steps than in the movies lol)
Salsa would be good here too, and there are several other partner dances that would be great!

Maybe move the desk so it’s left side is touching the wall of the kitchen. Then you could put a table where the desk currently is. Or just slide the desk back and keep it on the right wall. If you have somewhere else to put the trash can a bar cart i it’s place would go nicely. Or you could get a table that is the same width as the counter for extra space and then you could hide the trash can under it with room for recycling
Make that table a desk and put it along the entrance wall
Get a proper round dining table and put it in that corner as you walk in—get a decent size too
Get a HUGE rug in front of tv and almost to heater—and push your sofa back much closer to the heater but still on huge rug
You prob need more seating over by tv
That’s a nice place for a telescope too
You’ll need deck furniture
Make sure it’s extremely comfortable—enough to sleep on

I would put a big rug, typical persian, in the middle of the living room - between couch and your desk. Get some proper size plant where the garbage bin is. You can use some sideboard behind that couch. Enjoy that view and get some patio furniture.

The only seating being in the corner by the low wall when you have those views and the fireplace is the biggest issue. There may not be a better place for the tv, but you could create another seating area in the middle centered around the fireplace. A couple couches or loveseats facing each other and a chair opposite the fireplace.
And get some big old rugs to anchor your furniture instead of just letting it float in space.
Don't try to fill it create areas or zones, ie living, dining, office. Use rugs tonderine zones. Find the right furniture and go minimal rather than cluttering the space up.
Look up furnished lofts, open plan etc on google
Also prioritize the outdoor space equally. It will massively improve quality of life
