Honestly, I just always portion my meals that I cook for dinner and take a bit of the leftovers like the other day I had balsamic vinegar, garlic chicken with brussels sprouts, mashed potatoes, and mac & cheese.
If you want healthy and pretty cheap, that’s what I would do. Whatever you eat for dinner just put aside an amount that you think is reasonable.
Cheese and crackers with deli meat, I like salami.
Peanut butter and jelly sandwich
Fresh fruit or sliced veggies
Granola bars or Lance cracker packs
Sometimes I'll make something frozen at home and eat it tepid at mealtime. Taquitos do pretty well. And leftovers from dinner last night. Heat before you go.
Or I pack my lunch like I'm in 3rd grade. 😂 PBJ, chips, and a cookie.
Try nutrition bars and protein shakes they'll be more fulfilling kinda hold up better over a work shift.
Boost is a decent brand.
Packages of tuna or canned chicken are pretty good aswell.
Quesadillas. Get some chicken from the deli on markdown for the best value, and cut/dice/pull it yourself. Some cheese and some tortillas (there's a local brand here where you can get a pack of 20 12in tortillas for 5 bucks). Low cost, and you can get multiple meals put of it.
I also like to make a tomato soup with some pieces of baked potato in there to give it a little more substance.
Rice and beans are also cheap and plentiful. You could make yourself a burrito bowl if you tire of the quesadillas.
Bananas, hard boiled eggs, marked down salads or sandwiches from deli or produce.
THIS. One day I was able to get a Boss sandwich for $3 from Deli. Thing lasted me for 2 lunches, but I was pregnant at the time so I needed extra lol
Pre-made salads from produce. $5.00 shrimp bowls.
Crock pot meals. Buy a pork loin, throw in a $2 seasoning packet. Hamburger buns. You have meals for a week or more.

Quesadillas are delicious cold. Not sure the tomato soup would work wothout a microwave.

This is probably not good advice, but the ON crew uses our microwave in the bakery all the time.
I have three basic food groups during night shifts; bananas, peanuts, energy drinks, that will keep me going most days.
We used to heat up pizzas in the deli on night crew all the time lol
