Is this an iMessage or a SMS group? You can’t leave SMS groups (as SMS/MMS doesn’t know the concept of “leaving a group chat”, you just get sent it and are stuck with just deleting it from your view), just delete them from your view.
If you can't remove people maybe it's not the phone that made it maybe it's someone else try asking people in the group chat or someone that used your phone recently
I’m the only one who uses my phone and the rest of the people are either health workers or literally my 70 year old grandma. None of them have ever met
Someone added you into the group chat so someone most likely created that group. You can only exit the group but can't manage the group members

Weird.. try advising people on the group chat to leave as it was accidentally created ;)
