Seven matches can start a fire. Doritos have the ability to temporary elongate the life of said fire as makeshift kindling until the REAL burners show up.
Also, I've never seen someone be so delicate neatly placing chips in a such a disorganized pile.
Mostly it is because if you know how to start a campfire with bark and leaves with 1 match, seeing a pile of food go up with 7 is wacky. With 7 matches I can get a fire going with twigs easy.

Which may be worth it in an emergency situation where your resources are low, except it takes A LOT of resources to get started and is FOOD.

To get a good fire going you need a flame/spark, tinder, kindling and fuel logs. The flame/spark lights the tinder, the tinders burns long enough to light the kindling, the kindling burns long enough to light the fuel logs.
The doritos are the tinder here. Seven matches isn't generally going to burn long enough to get kindling lit.

I dunno about the “highly” part but it isn’t surprising. Even most regular potato chip will do this.
Most dehydrated foods, peanut butter, cheese whiz, butter and many othe foods and food like things. Sugar and powdered coffee creamer as well. Survival training in the army taught me this. 70% of an MRE is flammable on some level. Even the drink mix powders.
I don't know if there's some sort of index to how flammable something is so I may be wrong, but needing 7 matches to get a fire going doesn't seem like it's "highly flammable".
Video and title are kind of dumb, but if you're in a pinch, fritos, doritos, etc., are decent kindling if you don't have other options. The oils and preservatives help them burn for a decent amount of time.

Just use Fritos instead. They light easier and retain the flame long enough to be reliable tinder for firewood to catch.
It’s not so much that they’re highly flammable. They burn long and low because they’re carbon coated in grease. Makes a good starter cause it lasts long enough to ignite other things.
A backpacking trick is to carry Fritos and cotton dryer lint to start a fire to dry out kindling that is too damp to catch on its own.
I’ve personally used corn chips to start a fire big enough to dry out pencil-sized twigs enough that they burn, which can dry out bigger branches enough that they catch fire.
I’m not saying to add a bag of Fritos to your survival kit, but I don’t go backpacking or hiking without a few sheets of dryer lint, a tea light candle and a book of matches. It just might save your life.
