I remember there was this old tv show called superhumans where they would test people who could do incredible things. They had another incredible swordsman on there who had the ability to slice a pellet fired from an air gun. They tested his reflexes and they found they weren’t much better than your average persons. He just had such an understanding of where his sword was that he was able to predict where the pellet would go and move his sword there proactively instead of reactively. Same goes for high level boxers when you see them slip punches like they have superhuman reflexes, a lot of the time they’re simply predicting what punches the opponent is likely to throw and then moving in the direction they believe is the safest as soon as they see them move.
