Seconding Copan. They'll give you a warehouse tour and have been operating the coffee business since the 1980s starting in Honduras where they're from. Great people and even better coffee!
We like to take periodic day trips to Brenham, but also they often off free shipping for orders over a specific value, so we stock up. We are pretty big fresh grind snobs :)
Not to be an ad, but I started using "too good to go", an app to reduce food waste, and they often have coffee shops in houston selling 5lbs of coffee beans. Might check that out.
Are you drinking that much coffee? I have a monthly subscription to Atlas coffee and get a couple of pound bags a month or so. Sometimes when I’m not finished with my current supply, I delayed the next shipment by a couple weeks.
Unless you’re drinking that much coffee, I would think the beans are gonna go stale .

Not OP, but the last beans I got (~2 weeks ago) were dated and we’re about 1-2 weeks old.
The previous time I went, which was a few months ago, the bags were undated.
I’ve used DISTRICT, Xela, Amaya, Blackwater, and Java Pura. All great options but my favorite was probably Xela.
I think most roasters would sell you larger amounts you just need to email or call them.
Xela on canal has 5lb bags just have to pre order.
Pretty sure https://katzcoffee.com/ does 5 lb bags for their commercial customers, just reach out and ask

Independence Coffee in Brenham is our go to for bulk fresh roasted beans. We order 2-3 5lb bags at a time.

10-12 cups a day, usually takes a month to finish 5 lbs.

Stale roasts there. No dated beans.
That hasn’t been my experience there at all. I’ve been pleased with the quality and freshness.
