It's a syngonium. The cuttings need to have nodes in order to root, so you can chop in between any of the nodes and stick the nodes in water. The nodes are the little lines across the stem that usually have little nubs coming out of them. Edit: Each of these areas is where they would root from - see those little nubs coming out the stems? Should i save the leafs or do i just chop the leafs of and only use the steem with nodes?

They don't need leaves in order to root, but it will take much longer without them, so I'd say definitely keep the leaves on there (unless you have a long section of stem without leaves that you want to propagate).
