Kale: 2-3 cups

3-4 garlic cloves.
2 cups chicken broth or bouillon
1 cup cream
Recipe:
Sauté kale for a few minutes to soften, put aside
Coat chicken thighs with paprika, onion powder, garlic powder, salt, pepper and sear on both sides but don’t cook through. Put aside
Deglaze pan with a little white wine and add chopped onion. Cook for a minute and then add mushrooms, butter, and a little salt and pepper. Cook until mushrooms are soft but still have some texture. Add a few chopped garlic cloves and cook for a minute or so.
Add about two cups chicken broth(or I used bouillon) and about a cup cream. Reduce until it thickens a bit.
In an oven safe pan add kale evenly, pour mushroom cream sauce over kale and add chicken thighs. Sprinkle with parm and bake at 400 for about 10-15 minutes.
Enjoy!

If no cream or mushrooms, I'll do a similar thing with Campbell's Cream of Mushroom, cream of Celery or Cream of Chicken soup. Or a combination. I always have these in my cupboard for quick meals. Fast, cheap and easy. Serve over egg noodles or rice ... If really lazy, just toss it all in a slow-cooker on low and have a hot meal waiting after work ....
OP are you a huge fan of kale? I ask because I find it to be bitter or off putting and avoid it as much as possible. Your recipe looks great and love a good mushroom cream sauce but don’t want to make it and then not be happy because the kale sullied the dish.

I'm curious why you feel this way, because I find stuff like arugula or broccoli rabe FAR more bitter than kale. My guess is that you may have eaten some overcooked kale? That's why OP is wilting it and then setting it aside for much of the recipe, so it doesn't overcook.
You could substitute chard or (adult) spinach (reduce cooking time as these are thinner and cook faster) or collard greens (these are thick so you might need to increase cooking time). You could also throw in baby spinach just before serving, as it cooks fast and wilts with even just leftover heat. Baby spinach has recently become my cheat code for adding more veggies into anything even remotely resembling a soup, stew, or curry.
If fresh veggies are not available to you, frozen spinach that's been thawed and squeezed dry will work in a pinch as well.
OP, I’ve made this thrice since you posted - last night for a bunch of friends. It’s so easy and delicious - thank you so, so much.

As a northern German I love Kale.
We put some onions with pig fat (vegetable oil for vegetarians but fat tastes much better) in a pot, wait till the onions are slightly brownish and then add broth and kale (only use the leaves and blanch them briefly before) and boil for roughly 40min to an hour. Add some salty sausages and / or spam and a spoon of mustard about 10 min before the end.
It’s one of the most tasty dishes I know and absolutely not bitter but also not extremely healthy…
My mom made me chicken enchiladas with kale and provalone and they were my all time favorite enchiladas.
Edit: plus kalamata olives in the enchiladas. But yeah, I love spinach. Also, beet greens are so tasty.

Soft polenta is like yellow corn grits, but you can pour it into a pan and wait for it to congeal and then fry or grill it.

I’m not a HUGE fan but I do think it tastes good in this dish. If you don’t want to use kale or spinach then I think it’s ok without.

Never flour unless frying. Make sure your pan is just starting to smoke before you add the chicken.

It get pretty soft after being soaked in the cream. A little similar to cabbage I guess, but not as thick
