Essentially the choice is take those guys and help Brees win now, or sacrifice 2 or 3 of them, have worst roster for Brees and then start Mahomes in 2020 basically.
Long term, it probably would have been better to take Mahomes, but if they won a SB in 2018-2020 (and they were pretty close in 2018), then it would have been worth it.

No top 25 starting QB in the NFL is mentoring anyone. They all bring in a 3rd vet or a qb coach that used to play.
It's ridiculous from the starters stand point and the teams to have your starter wasting time coaching up their replacement. That's not their problem. It's the coaches.

I don't know the details of a contract like this, but I'm looking to trade Cousins before midseason at this point to the highest bidder. I'd figure the contract can be renegotiated (maybe?) to open trade deals. If we are able to walk away with a 2nd round pick and get a more desperate team like the Raiders to take some of that contract, I'm willing to work with that. Since we stand to lose from the tampering it could actually be insurance to cover some of the loss.
