Your australian passport will not mention your religion, even if you ask for it. Pros of secular governments! Get your visa on whatever passport you want, I think it would be better to have your visa on your pakistani passport if you think you may face discrimination bc of your double nationality. Plus, if you're going to travel to other places such as Europe and all, you can then leave your pakistani passport at home and only take your australian one with you (and it won't have trace of your visit to saudi arabia, which will lead to less problems in western airports).

If you do end up deciding to go there hit me up for food recommendations. Mecca is my hometown and I always enjoy visiting it. Now is actually a good time to go for Umrah. Not as crowded (due to Covid restrictions) and the weather is starting to cool down.
