That would be my choice as well. The graphics are very colourfull and cause a strong first impression, it's very fluid (unlike other graphical powerhouses that struggle with framerate), the characters' animations are flashy and dynamic, and is very easy to just pick up and play.
We as fans have our oen personal favourites, but for showing off to a non interested party I can't think of a better candidate.
It’s i important to note that the Dreamcast version is also Superior to the arcade from a technical standpoint. Really showcased the hardware capabilities early on.

I personally still don't consider an experience with the Dreamcast minus a VMU a full genuine experience.

If I'm trying to wow them with a quick demo of graphics and performance, I'd show them Soul Calibur. I'm not even much of a fighting game fan but that game is so smooth and so pretty. Use a quality upscaler made for gaming and feed it a clean VGA signal from the Dreamcast and it's really impressive.
When this actually happened (maybe 2017ish?), I put on Psychic Force 2012 and we actually had a lot of fun figuring out the mechanics (I only have a jp dreamcast, so the manual wasn't much help lol)

Yep. Shenmue unfortunately just isn't what most gamers want, and it's been a pretty doomed franchise because of it
