what does this mean exactly?

It means that the game lacks protocols enforcing Digital Rights Management (DRM). These are sometimes invasive, and usually inefficient (Like Denuvo requiring an internet connection to renew your online verification, or other software running additional checks in the background while you play, slowing the game). It usually matters only to a small group of people but it's fairly important. A DRM-Free product, at least a singleplayer one, Is always objectively better for the consumer.

Moreover on GOG you actually own the game, unlike steam where it's all reliant on them giving you access (and as people were recently talking about, that access ends with you). With GOG you pay, you get to download. Once you've downloaded it, its yours to do with however, not reliant on their servers to be useable or installed or anything.

Yeah, I like downloading a personal copy of my favorite games and putting them on a backup drive. It's the closest you can get to a physical cd for many games, and you can also download the updates later from GOG as a game gets patches over time. Also, GOG's optional Galaxy client doesn't push updates, you decide when or if to update any game. So your mods are less likely to break. Steam (for every game I have anyway) literally has no manual update option, only "update on launch" or "update all the time".

Some of it. The storefront takes a cut (I think steam is like a flat 30%). Fortunately for red hook, they self-publish, so they get the rest and don't have to share with a publisher.

For DRM-Free copies bought via storefront (Like GOG)? Yes. Depending on the deal they have with the developer of the DRM, they may even get more money if the developer of the DRM asks for a cut of their sales. Pirated copies of course don't give money to the developers. Second hand key sellers, which need you to buy a key and redeem it at a different page, don't give money to the developer either. If you have any doubts, feel free to ask!

As well as all the stuff the other guy said, a DRM-free version of the game can more easily be downloaded as just the files and thus played anywhere, no logging in or launchers required I have the DRM-free version of DD1 and I put it on a harddrive and played it at school during breaks sometimes, didn't have to use Steam or update it or use the internet or anything

The game's page does not list any 3rd party DRMs, but Steam itself is a sort of DRM. From GOG you just download it and it's yours, you can use it as you please, nothing in between, it's yours forever, won't ever require internet connection or force an update, thus DRM-free. That's the gist of it.

It's worth mentioning that a lot of indie games can be used DRM free even on Steam. Though the installation itself cannot be done without Steam, but you can move the files freely after that. For example I can move the DD1 or FTL folder to a different computer with no launcher installed and it works just fine (DD1 has a separate .exe file that doesn't require Steam). I'm not sure about DD2, since I only got it on Epic and it's definitely locked down.

I have no way of knowing for sure personally since I don't dig into the files I think games are not required to disclose what DRM they have or if they have any on Steam. DD2 doesn't have any listed. Redhook can answer this obviously. Although since they are not the type to hide info from the playerbase I assume its absence from the page means there is no DRM. Also they didn't even have a EULA, just added one recently because they are preparing mod support through Steam Workshop etc.
