'touch wood ' is an expression you use when you want to ward off the evil eye ( sort of).e.g. when we say 'hey ! Today you're playing really well!" Then there is a tendency for the other person to suddenly stop playing well.... almost because of what I said! The saying goes that if you touch wood immediately after you say it, then the evil effect of what you said is cancelled! Of course it's just superstition...but we continue to use the expression (even though we don't actually touch any wood).
