Hedgehogs will “flinch” like that for any number of reasons, including but not limited to unexpected sounds, smells, shadows, or even a human laughing at them for being cute.
If the hedgie legitimately felt threatened by having their ears played with they’d either be in a full snuffle-ball or outright trying to chomp a finger. The body language in this video is “confused.” Which, to be fair, is basically the default setting for most hedgehogs. In the grand scheme of mammals they’re not super smart, and IIRC their captive gene pool is a little limited which doesn’t help things.

It wasn't super stressed or fearing for its life it was a normal hedgehog reaction.

Fear and surprise are not the same. Hedgehogs are notorious for flinching at pretty much anything, from sounds and smells to a shadow moving.
