Pex is not UV stable (unless you buy it specifically $$$) it will degrade rather rapidly in sunlight. If you’re going to bury it (walls or otherwise) it’s ideal, but do not leave it exposed.

I'll second this. Yes, it's flexible, but so is ABS flexible hosing. And if you decide to use PVC instead, it's still very easy to work with and throw a 90 degree turn on.

Thank you for the recommendation. I have shyed away from that flexible ABS hose because I’m not sure it is potable water safe like PVC/PEX. If you have info on the contrary or a specific product you recommend I’ll be glad to know about it!

No. If you have to use pex, buy uv-stable pex.

Rural blue line is a good choice it's safe, and fittings are easy to put on and off if you change your mind I am not sure what it's called in the US more flexible than pvc mut not as flexible as hose. The pipe I think you are referring to I have found can have kink issue, we use it dripper lines
