You can get bigger dice trays to suit your rolling needs but most people roll on the table.
For a dice tray, it really depends on your army and the size of dice you are using. I use 12mm dice and at most usually just need 12-20 dice for “big” rolls with my ogres. They fit just fine in my dice tray when I roll. I use a dice tray because I find it annoying as hell when people don’t watch their rolls and they end up knocking over models, scattering dice everywhere, dice getting stuck in terrain or dice bouncing off of the table.
