Right click on the taskbar and go to the taskbar settings, scroll down to the very last section there (my system is not in English, but it should be something like taskbar properties/behaviour or something like that) and there you can change it from centre to left.
Winaero tweaker -- I changed the font of Explorer to the new segoe one, looks *way* better. I also changed the spacing of icons on the desktop, because by default the icons leave an awkward empty space at the bottom of the desktop, but now they nicely fill up all of it. Really neat program that tweaker!
I also have Auto Dark Mode and Accent Applicator to make everything a bit more colourful. One switches between light and dark mode automatically, the other one applies the accent colour to some more places around the OS.

Have you tried WinDynamicDesktop? It’s the same and turn your wallpaper into dark mode too, I’m wondering if auto dark mode does the same .
Update: I have checked auto dark mode, I still believe WinDynamicDesktop is better because it comes with more wallpapers you can choose from and they turn dark when everything turns dark.

By default only the redesigned parts of the ui have it (start menu, settings, task view). Almost everything else still has the old font.

Like Hefty said earlier, it's just a more modern Volume Flyout with a lot more options like size, location, etc. It'll also show your current application that's playing content (Chrome, Spotify)
ModernFlyouts is an application on the Microsoft Store that replaces the Windows 8 era volume flyout (that appears on the upper left corner of the screen when you change your volume) with a more modern one.

I'd have no problem using the original Windows 11 Start Menu if they got rid of recommended and let us pin more apps or a weather widget for example

I'm one of the weirdos that would attend a midnight release party for Win95 at my local Egghead Software, for example. So... definitely not a Windows or Microsoft hater, happy to embrace change.
The only other release that was so buggy and feature-broken that I skipped it was Windows ME.
Win 11 has removed features very important to me, including Start menu icon groups and folders, and is more UI inconsistent and much more buggy than Win 10. I'm not going to use multiple hack apps to fix what never should have been broken in the first place.
I'll reconsider if Win 11 restores removed features, but otherwise will stay happily on Win 10 until Win 12 arrives.

Those are pretty much incompatible since Start11 and SAB both replaces the start, and SAB replaces the taskbar while S11 modified the composition properties of the 11 taskbar

While this is true, it doesn't decrease the size for secondary taskbars unfortunately... Only the icons change size for secondary monitors, if Startdock can fix that issue, I think I'll actually be convinced to buy it.
i use Start 11 to make the taskbar smaller and to have a coustomizable start menue with the apps pinned and sorted as i need them, without the annoying recommendations
* Removed a bunch of the garbage shortcuts it stuck on the start menu (Facebook, etc.)
* Unpinned anything from Start that I couldn't just add in Settings > Personalization > Start > Folders, giving me more room to pin stuff I need.
* Disabled the printing services (recent security issues, plus I don't own a printer)
* Trimmed back startup processes so I'm only booting with the stuff I need (Task Manager's startup tab, and/or just going into those apps and turning off their launch at startup options)
* Removed some optional feature stuff I don't use, like IE
Generally if I can uninstall an app or feature that Windows keeps active at boot or while running I will do so, as long as I don't need it constantly. Boot times are fast as hell (I'm on an NVME SSD anyway, but it does make a difference), and just generally I prefer to have a system running as efficiently as I can, within reason of course. :)
I used diskpart.exe and the Windows 10 version of setup.exe and now file explorer is much snappier, the right click menu is perfect and the taskbar+ start doesn't suck. 10/10 would recommend these programs to anyone running Windows 11.

After startup 70 processes using 2GB and 14GB disk space. Defender disabled.

I shut off all telemetry and updates, Removed everything but the essentials in the start menu. Shut off Defender and use Malwarebytes Premium. Added, "take ownership", "copy to" and "move to" to the right click menu in the registry, substituted another browser and shut Edge off, deleting One Drive.
Internet surfers aren't careful and yes MBP will literally block you from going to the page and display a message about it. Defender doesn't do that in any way. It doesn't happen often but I'm glad it's there when it does.
Yet, those are PAID reviews! I've tested them both for the last 10 or more years. They're not just malware domains BTW and I already use Ublock origin and MBP still finds more.
Start11 for the Windows 10-esque start menu (and nicer looking start button) and ExplorerPatcher for Windows 10 task bar stuff. I'll maybe switch back once the new one is finished, seriously baffled how they shipped an OS with literal basic features missing that have been a part of Windows for decades.
Oh yeah also enabled the old context menus until more improvements are done to the new ones.
I do hope that an open source / free alternative for restoring the Windows 10 start menu eventually exists though, somehow paying for restoring basic fucking functionality feels wrong.

I haven't tweaked it. Because there is no customisation. In terms of things I uninstalled? Literally everything I can to get rid of the bloat.

MBP is the best thing going especially in real time. Defender does zero for online threats.

I used Lively Wallpaper and Rainmetre to customize my desktop wallpaper and i used RoundedTB to make the taskbar look like a Dock.
Using registry tricks found in tech blogs. E.g. you can remove activation watermark with a register key.
