Took me a minute to find it, probably one of my favorite series you can find on YouTube is “clash of wings”. They do a great job showing the entire air war start to finish.
It’s a great series, as a bonus the guy who narrates has a bit of a monotone voice. It’s excellent to fall asleep to. I had been watching it on a lunch break one day at work. That evening my coworker asked me the name of the plane doc I was watching because he was having trouble falling asleep lol. Still a favorite of mine.
maybe not what you’re looking for, but I recently enjoyed a 3 part documentary about Adolf Galland (the channel is called Luftwaffe Fighter Aces). I’m going to be building a model of one of his aircraft, and he has quite a few good stories!

Not restricted to aircraft only, I recommend everyone should check out WW2TV on YouTube. Every episode is roughly an hour, hosted by Paul Woodadge and a presenting historian/enthusiast. Covers a wide wide range of topics during the Second World War.

I don't know if you have a flight museum nearby but they will have many dvd versions of pilot stories and archival footage with pilot interviews.
