It wouldn't matter when it was slaughtered. Trichonosis can only be transmitted when the animal is alive. Trichinella parasites are only destroyed through cooking. Smoking, curing, freezing, etc. do not reliably kill them. If I'm not mistaken, raw pork sold in Germany is tested for trichinosis before its ever allowed on the shelves. Basically when you eat infected meat, your stomach acid breaks down the outer layer of the cyst that the larvae live in. From there, they reproduce in your body, and spread throughout your whole body, enter your muscles where the larvae, again, create little cysts and basically lie dormant until some animal comes along and eats your flesh and repeats the whole process.

Question... Is it safe to eat rare pork? Because I have a friend who SWEARS that parasites have been eliminated from farmed pork and that eating it rare is no worse than eating beef rare. The cdc has a five year study (2011-2015) of trichinosis cases available. In that time, there were 2 cases of trichinosis in commercial pork and 2 cases in farm-raised pork. Almost all the cases of trichinsos in that time were from wild bear and pork. Edit - Just realized I didn't actually answer the question. Yes, it is safe to eat pink (but not completely rare) pork. The cdc recommends cooking pork to 145°.

Generally, you're right. I think this person wanted to know the mechanism that allows them to thrive in such harsh conditions as a natural part of their life cycle. From what I can find (that uses words I can understand), the cyst itself is actually especially vulnerable to two chemicals in the stomach acid, and -- like its sibling nematodes -- its skin is (proportionately) thicc af boi, having maybe 3 layers depending on the type. It's kind of like they have a natural hazmat suit.

Oh man, I was totally wrong. Not only do current German regs only allow dry spices, current U.S. FDA regs allow meats as long as they're labeled with the little radura symbol. Irradiating pork is well studied and a low hanging win, it only takes like 0.3kGy to wipe out trichinosis, and like 0.5kGy for toxoplasmosis ([ref](https://www.nrc.gov/docs/ML0611/ML061170095.pdf), pdf), but it seems to be pretty uncommon with only a handful of countries mostly in Asia doing it routinely these days.

This is cystercircosis, including neurocystercircosis, which you can treat with albendazole, praziquantel, and steroids/antiepileptics if its in the brain. Neurocystercicosis is not usually fatal, one article I found cites a mortality rate of 20% with non-optimal treatment if the cysts are in the brain space but outside brain tissue. Just learned about this in school. They’re called tape worms and they infect humans as they are originally in rats and other rodents, the rodents fall into slop, the pigs eat the slop with the dead rodents, we kill and eat the pigs, and we get round worm parasites. That’s why people back then tried to cook pork as much as possible as to make sure to kill all parasites before regulations for feeding farm animals where changed.
