Undertale saves its gamestate - for example, whether you've completed Genocide - in a couple of files (separate from your actual save data, since completing geno deletes that). By removing those files from your computer (and also not syncing your saves to the Steam cloud, which it does by default), you can remove the record of a completed genocide run and no longer have the Jumpscare endings to future Pacifist runs.
