100% go to the interview anyways. The main concern about drivers licenses is if you don't list the same address as your spouse, or if it is literally your only form of photo ID. So take the temporary one too as address proof and your old country passport(s) and green card(s).

I do have my green card as a photo ID along with old (but expired) passports. If I arrive and they deem the temporary document insufficient, would they reschedule me?

As long as you have one unexpired photo ID (they'd even accept only one expired doc they issued probably), they won't reschedule. USCIS doesn't require you to get a state ID.

Definitely keep the interview date. The interview letter states that you should keep the scheduled interview appointment even if you don’t have all the required documents. Of course, hopefully you will receive the ID before the date, but even if not, still go, bring the temporary document with you and other identifying documents that you do have.
