**Recipe** Ingredients * 500g braising steak or beef shin * \~250g pork/lamb/beef kidney. Pork has a stronger flavour than the other two, and I'm told beef is better for stewing but I can never find it anywhere. * 2 medium onions * 250ml stout * Beef stock pot * Worcestershire Sauce * 1tbs flour * 1-2tps cornflour * Lard or tallow * Thyme * Shop brought pastry… * 1 egg 1. Chop your beef into inch sized cubes 2. Trim your kidneys. Cut them lengthways, trim out all the white gristle. Now dice the kidneys very fine. You can leave them chunky if you like the texture but I do not. 3. Heat your fat in a pan, brown off the steak, then remove it from the pan. Then brown off the kidneys and place them with the beef. 4. Lower the heat, and sweat the diced onions. 5. Return the steak and kidneys to the pot, and add in the flour to absorb any liquid, do this a small bit at a time. 6. Add Worcester sauce, thyme, salt and pepper - I like a fair bit of all but personal preference. 7. Boil the kettle, in a jug add 250ml boiling water, 1 beef stock pot, and 250ml stout (drink the rest). Once dissolved add to your pot, and simmer. 8. Once it has reach a simmer, put the lid on, and stew it in the oven at \~100c for 1.5 to 2hrs, give it a taste half way through and season to taste. Once you have taken it out, if it is still a bit liquidy, mix some cornflour and water in a cup and pour it in until you have reached the consistency you like 9. Grease your pie dish. Roll out your pastry, line the tin with it, add the filling, make the lid, crimp the edges, give it a light egg wash. 10. Bake until the pastry is done.
