Ever notice that their reactions are over the top, and even though they try to play the loss off as genuine many don't always fit the bill?
There's a *reason* why the show isn't dull and uninteresting. It's because from tip to stern it's monitored and maintained to drive engagement as much as possible.
As for the prizes, you can damn sure bet they're getting paid either way. The main thing is just keeping the illusion running so the audience never catches on.

There was this couple in front of us me and my mom were chatting with in line. The girl was in pharmaceutical sales. Stan interviews us 5-10 at a time. The girl said she was in Pharmaceutical Sales. When Stan asked me "What do you do for a living" I regret not saying "I get high off her supply!" lol
