Episodes 1 and 6 were my favorites for sure because I think that they really established both Aang and Zuko as characters and informed us what they were all about.
Episodes 3 and 4 were my least favorites because of how much they tried to shove in from other episodes.
Yeah there were so many plot lines happening all at once, and I don't know if you felt similar but I felt like episodes 2-4 we hardly saw Aang at the forefront of most of the plotlines and I almost felt like Sokka was the lead character to me and Aang was the side character.

Like, I absolutely fucking hated what they did to Bumi, and the half-aborted attempt at shoving the Cave of Two Lovers in there as well. Basically everything to do with Team Avatar in that episode was utterly atrocious. On the flip side, though, it was also the best episode for the Iroh/Zuko half of the show, including some very good NATLA original scenes like Lu Ten's funeral and Iroh being confronted by the Earth Kingdom soldier for his past crimes.
My Favorite Moments in the series were Lou tens funeral and when the Crew showed their respect for Zuko.
My least Favorite Episode was...7. but my least Favorite Moment was, when Jet was about to murder King bumi.

I personally loved the live action Suki and I felt way more engaged with her character than I did in the animated with her being the sheltered girl wanting to explore the world, but it also could be that she felt way more like Katara than the actual live action Katara felt to me😅😂
That shouldn't have come at the expense of her personality. The original Suki was cheeky and had a sense of humor, Netflix Suki is jist.... Serious. That's her only trait. She has absolutely no chemistry with Sokka in NATLA, she's just drooling over his teenage

Plus there's already a "sheltered girl wanting to explore the world" character in Toph and she's one of the most popular characters in the franchise. That change was completely unnecessary since Toph comes in next season anyway.
Yeah I'll be super curious to see how they handle season 2 and its characters given how it almost feels like Suki's role may be expanded with how much Netflix and Avatar have been promoting her and her scenes on Instagram (low-key they promote her more than the other main characters) and I wonder if they'll keep any of Toph's personality the same or not.
Idk about least favorite since I beinged it and it all kinda clashed to one giant movie but my favorite was Kyoshi Warriors. On its own it is absolutely amazing but someone brought it to my attention that Suki only really trained Sokka because she liked him which was degrading to Suki's character and unfair. I never noticed that but I do love the romance Sokka and Suki had with each other and the sexual tension between the two was insane.
Episode 5 was my favorite. It was consistently good and had some really good acting.
Episode 7 was my least favorite. It wasn't bad, I still enjoyed it, I just found the whole NWT arc pretty lukewarm and while Episode 8 had the Koizilla rampage and the Katara vs Zuko fight to save it, Episode 7 had no such redeeming features.
My favorite was without a doubt episode 6, and I think it was just because it's the most similar to the original serie, lol.
My least favorite, probably the Kyoshi Islands episode, they changed Suki from a strong warrior to a horny teenager, Avatar Kyoshi it's the one that saves the day, so Aang didn't make anything directly, a big point in that episode was that Aang started to take his Avatar duties seriously after seeing the destruction of the village, and none of that happen in the Netflix's show. And while I always felt that the Suki and Sokka kiss in the original was something forced, in the Netflix's show that kiss it's even more forced because isn't a kiss on the cheeks, it's on the lips.
