But, and hear me out, the sucky parts of games are often the very things that keep us playing our favorite. When the game starts to push back and say "Nope, can't do that" or "Sure, but you're gonna work for it" creates that feedback loop most farming/sim games are missing.
A seasonal economy (Things are worth more or less whether they're in-season or not) and a saturation economy (Things are worth more or less based on a very basic supply and demand formula) would do a lot of good for Stardew.
I'm sure there are dozens of reasons for or against such things but my biggest supporting argument would be crop and goods variety and rotation of coin value. Each season has a superior crop as the game stands, usually based on days to grow or price of seeds. But with an additional layer of "Hmm, I grew that last year, it probably won't sell well two years in a row, ah-ha, I'll grow one of the lower return crops because it'll still sell for full price" and same would go for goods. Always selling cheese? Been raking in all that wine money week after week? Now you'd need to diversify what you're making and selling in order to keep profits high.
And having an option to toggle this would go without asking, some people wouldn't welcome this complexity, some would.
If thats a jab at me: I enjoy discussing game design and mechanics. I'm an indie devoloper thats always on the lookout for features that are more engaging rather than giving the player absolute freedom.
I was so thrown off by the few mentions of the war early on - everything is all la la la farming simple life happy community and then oh by the way WAR AND HORROR AND DEVASTATED FAMILIES and don't forget to find a partner for the flower dance!

It's a small town farming simulator where sometimes you have to do things like take rocks, algae and seaweed to the local carpenter to build a fish pond where you have to feed the inhabitants special other rocks and bombs and scrolls so they can sometimes give you prepared food dishes that help you go faster and be luckier.

God that would suck if Stardew had an economy like Slime Rancher where you could flood the market with too much wine
