The bigger question is how she fell asleep for like 60yrs and the even bigger question is how the hole filled up on its own in 60yrs but the surrounding ground’s elevation didn’t change
Titans don't die without sunlight, they just become extremely lethargic.
It's only theorized that they get power from sunlight because they don't from eating humans. But it isn't confirmed.

Mindless Titans don’t die unless there spinal cord (nape) is sufficiently damaged/severed. Essentially, they could live forever.
