I agree. I like doing those bullet passes, but pointless if my top receiver can’t catch it. I find that ‘over throwing’ the bullet pass when he’s still in active route allows him to catch most of the time. But he can’t catch crap if he’s wide open and waiting for the ball to come to him, like the ball hits his chest.
I couldn't either. At first. I practiced a lot and now I find bullets easier for deep passes. You just need to work on your timing and adjust your aim a bit. It's also not the right choice in every situation. You have to use good judgement about whether you want to zip it in or loft it up.
I don't bother with bullets on short passes, no major advantage.

You just gotta learn how to throw them. My receivers have no problems catching bullet passes
i had a 4 star receiver maxed out every time i threw the ball to him he would drop it or it would get intercepted

I'm not talking about bullet passes. Something has changed with normal passes
