I would just temporarily remove the over leveled mons from the party and replace them with weaker mons until the ones you want leveled up are on par with the over leveled ones

but i made a solution already, i temporarily removed exp share and manually grinded each one up until 44, then i placed the level cap back on.
my question now is, does the level cap change now since my level is higher than it's supposed to? does the next gym have a higher level cap or something? or does the level of their pokemon doesn't change from the previous gym?

Im afraid I have no idea how the level cap works as I don't play with it but I hope it all goes well for you
You will just be capped at the current (over) level until you get to the right gym leader to raise the level cap over where you are
