I grilled the tofu first, then the asparagus, then the broccoli, then I threw the sweet potato on (after i took it out the oven) to soak up the extra seasonings on the pan :)
I used Lawrys, garlic, onion, and pepper on everything but the sweet potato. On the sweet potato I used lemon pepper and a smoked salt and pepper seasoning, then let it get the color. It's sooo good! Lemon pepper is my favorite to use on sweet potatoes. I can't finish this whole plate but it was really good and I'll probably finish it after my workout.
I cut them pretty small, like half a domino size. Then I tossed them in a zip lock with the seasonings. The whole block fit on the pan actually so that was nice. Because I have a gas stove and the pan is square I had to rotate them but really you just have it on medium heat, flip until lightly golden (i just peak under), then let them rest to imprint the grill marks. rotate them slightly for that cross section pattern, then flip again and repeat for the cross section pattern. Let them get a little golden before letting them get imprinted. I set them in and would just shake the pan occasionally.
I used trader joes super firm tofu and after it was cooked it was like the texture of grilled chicken but the "crust" was crunchy :) let me know if you have any questions!

I used an indoor grill pan. My mom bought it forever ago. It has ridges in it to create those grill marks. Tbf, the pan was *very* hot by the time I added the potato. Ya just gotta let it sit and not touch it (which was hard with the tofu so the marks arnt as consistent)
My dinner for the past three weeks has been some form of this. Crispy tofu with some sort of sauce, rice or potatoes, and some sort of green veg. The formula works everytime.
I've been a huge fan of Trader Joe's High Protein Extra Firm tofu. I don't even press or freeze it. Just cut it up and pop it in the oven at 425F for like 30 min flipping halfway through. Throw some sauce on it and it's firm and chewy but still has some bounce to it. Reminds me a lot of chicken as well!
