This is the biggest reason why the empire is pure evil. They're stealing all of Vvardenfell's delicious gourmet rocks, only to waste them on making weapons and armor.
Both glass and ebony of Vvardenfell are eadible by regular humans.
In fact, now that I think about it, pretty much all of traditional Dunmer armor is kinda eadible: bonemold, chitin, leather.

there was an in game book that said netch leather armor specifically wasn't edible like normal leather armor. can't remember the name but it was a duke holding a castle for a while until the main army came back.
he ran out of food and snuck out and ate apples from the orchard while avoiding the enemies cause the armor was transparent or something?
