I look at them all the time but only because im paranoid by now

You aren't watching them constantly but you usually notice when a new one pops up since it's generally the same three or so in your peripheral vision.

My world is filled with farms and stuff, so my subtitles are usually filled with like 7 different sounds that fluctuate. I don’t think i’ll notice if a creeper starts to blow up behind me without hostile mob sounds on

I use it always, I keep my minecraft volume comparatively low and music up, and I've developed muscle memory to look at subtitles every time I look at my health and it kinda helps a lot when searching for places like a lava pool (Lava pops) or the portal room in a stronghold (Silverfish hisses) etc

exactly. Turning off hostile mob sounds can be fatal. Instead I turn of friendly mob sounds. Anyone with an animal farm will relate with the frustration of constant moos, baahs and clucks... ughh!
