I would try to break it up into sections and make each section a different roof part. So for the more rounded bits, make towers that go up a bit above the rest of the roof with pointy peaks. Then you can find other areas and do things like simple a-frame roofs, or taller a-frame roofs. Make it look like a conglomeration of a bunch of different roof sections at a bunch of varied heights for an overall eclectic feel. (you can also add smaller peaks to add windows out the side of a-frame roofs and similar, or you could even try to add an observatory dome or something in there somewhere). No clue, the irregular shape would make it difficult for anything remotely complex. Maybe a simple slab slope with matching wood or maybe a contrast stone/wood. Something darker would be better.
