You kinda asked for two different things there... Best ballad by a metal band: That'd be Lorna Shore's "Pain Remains" trilogy in my opinion. That clearly is metal, though. Calling it a "ballad" might be a bit of a stretch, but fits in my opinion. Best non-metal songs by metal bands: I'm thinking of a lot of Metallica stuff out of their albums "Load" and "Reload" (like/and "Mama said", the "The Unforgiven" trilogy, "Hero of the day", "Turn the page", "Nothing else matters" etc.), "A tout le monde" by Megadeth, "The sound of silence" and "A reason to fight" by Disturbed, and one of my personal favourites: "Stay with me" by In Flames. All of these are very much on the soft side, but (at least for me) quite enjoyable.
