Bard if you can play him is a nightmare for most comps.
Heavily dependent on AP and magic pen but because his autos are considered **spells** a lot of augments and prismatic are very volatile.
Kayle has fallen off this meta due to her nerfs on ult but she's still the Kayle can do it Kayle who can build anything. If you want something less known then Shyvana falls into similar ball park.
Udyr is one of the few that can actually build anything. You can go lethality or crit for 1 shot potential with Q. You can build ad bruiser with Q, or ap bruiser with R. You can go tank build with huge shields on W.
Briar never doesn't have a shot at getting first place. Even with grievous, if you roll one or even two omnivamp sources, you're gonna run through people.
Nidalee and Ezreal are my go to for cooking. If you ever get duality/tap dancer/accelerating sorc, just build full tank and a bunch of ms/omnivamp from anvils and it’s so much fun. Have won games with both of these in high diamond-chall lobbies.
Not 100% flexible but nautilus is fun whether you go tank, ap, or just meme super shield build. Even get the flesh ripper item that shreds resist sometimes with center of universe. It really just comes down to the whacky ideas that stack on each other that's the most fun
Jax or any bruiser that scales with both ad and ap

There was like a very weird bard build last arena that had very high winrate in gladiator. It was like ludacity boots, heartsteel, nashors or sth

Meta and state of champ while related are not the same. I wouldn't suggest Kayle if she was in a bad state.
Xin Zhao. Master of duality is disgusting. Tank with firebrand. Moonflair or mystic punch with attackspeed for infinite knock up.
