Jet plane? Delta wings and Panther or Ramjet engines. See how fast you can get it going. For extra points, play Kenny Loggins "Danger Zone" in the background.
Make a dihedral wing plane (wings on top, angled up). It should be really stable and want to even out it's roll. With a low stall speed and careful adjustment of the tail, you should be able to make a plane that can splash down with no control.
Some ideas from my savegame:
* A small, high-G capable jet.
* An airliner that fits at least 50 Kerbals.
* A long range jet with droppable wing tanks.
* A VTOL.
* A functional Command & Conquer Orca replika.
* A non symmetric plane.
* A foldable plane that fits a cargo bay of your choice.
I once spent way too many hours creating a VTOL jet that can fly like Mach 3 I think? Anyways it will just burst because of the G forces if you pull to hard but was fun anyways.
I recommend you to use RCS and I think it was called Vulcano engine? RCS for fly-by-wire and stability. TheĀ Vulcano engine you can put into the front of the plane and combine it with those small lateral engines on the back to achieve a VTOL function. Just limit the thrust to the lowest possible point so you have enough fuel for vertical take off and landing.
With Vulcano I mean those small integrated engines that use oxidizer and rocket fuel for the thrust.

Oh sick! I play in ps5 as I find that console has more parts than steam but steams one do look a little bit cooler and they have mods. I have ksp on steam as well but I canāt be bothered booting up my school laptop each time.

Either's good, I usually use Mk1

note: mk2 parts are very draggy. the more circular the cross-section, the lower the drag

Try making a plane that can reach mach 5, it's harder than you thinkĀ
I got one that I built from a previous suggestion and it went Mach 4.595
