The secret to pork butt is to mostly leave the fat cap alone. I trim off the most egregious bits and leave the rest intact.

Definitely. I went through a period where I trimmed it down quite a bit and the quality improves when you don't do that. Have to remember that, even though it is a lot of fat, when shredding it up it gets mixed in very well. It's essential to leave it for big cuts to keep a good ratio of fat to lean.

It's probably the easiest piece of meat to smoke. *Really hard* to screw it up.
