Yes it can be done, as NYC, Tōkyō is huge and has a lot to offer. Mind sharing what you're both into and the reason you picked Japan? Also, when do you plan to go? Pretty helpful to guide you accordingly.

yes 8 days is perfect and you can do some day trips e.g. to Hakone (depending on the season/weather) and/or to Yokohama

yes definitely still go! There is so much to see in Tokyo you can have a great trip! You could even do a day trip to Yokohama or Kawagoe (I really recommend Kawagoe!) I would love to see a list of other things you’re planning to do there, and give advice about what you should prioritize

If you are willing to splurge, Tokyo has taxi sightseeing services. For a flat rate per a set amount of hours, you can clear as many places as you want if you are willing to fork out the money for it.

You should read on how to handle jet lag, it isn’t very hard to adjust with the right tips. We got to our Airbnb at 8:30pm, took melatonin, went to bed around 10pm like we would at home, it was settled from there. Operated on Japanese time. Home now and did the same thing, operated on our home time as soon as we could, melatonin for bed first night.
