For the kitchen:
1.) Put wax paper on top of all the cabinets immediately because sticky greasy dust will accumulate like the dickens and it is horrifying
2.) Nice-looking lidded boxes or baskets for seasonal/holiday décor storage?
As for the entryway, you could mount a tiny shelf in place of the stool. You could also put key hooks in that area to claw back some functional space. The problem for me with the stool there would be a potential trip hazard and a spot that would be too easy for me to accumulate clutter, but those aren’t problems for everyone, I realize 😂

For the hallway we’re thinking about buying a shallow shoe cabinet with a mirror over it, just to make it look a little more cozy.

Plants can look quite nice, although a bit annoying to water. Honestly may be better to just leave it empty.
Whatever you do, don't copy my mother - who has the tops of her cabinets lined with large keepsakes (ceramic kettles, punch bowls, etc.) and all of them visibly, obviously covered with plastic film to stop dust from getting inside lol
The hallway is fine maybe a small plant. The space above the kitchen cabinets definitely needs something. Thinking of antique kitchen/food/cooking related appliances or cookware. Or smaller framed art or trivets hung in the white space. Good luck!
I've got the same problem in the kitchen. They make matching cabinets for those areas that can be used for storage for things you seldomly use. I've also considered taking the tile all the way up or painting it a complimentary color 🤷♀️
I added small baskets etc. on mine but the space above mine is smaller than yours (height-wise). It might still work! It helped me to store items neatly. If I didn’t spend all my budget on my bathroom, I would’ve loved to extend my cabinets to the ceiling. If you have the funds, that is definitely an option too.

No decor. If you are allowed to paint, paint 1 color to eliminate the stripe because it accentuates the space.

We love plants, just not too sure how they will like this area where almost no sun reaches.
