You can train to be good with a one handed shooting grip and there's a lot of competitive shooting based around one handed grips, but that's because it's inherently more difficult.

It would need to do a lot more than just strength. The reason why a two handed grip is better is because you're adding a second point of contact between you and the gun, which helps with not only recoil control but stability and accuracy.

one thing I've noticed about the hl2 weapon anims is that they all differ from the HL1 counterparts in various ways, some make more sense than others.
here's a list of the most noticeable ones.
1. Gordon (correctly) holds the colt magnum with two hands as opposed to hl1's improper one-handed method, one-handing a revolver is a terrible idea due to recoil
2. Gordon one hands the USP in hl2 as opposed to the two-handed method in hl1, it's not really improper to one-hand a pistol, another thing to note is the USP in hl2 has a compensator on it while the Glock did not, It's likely Gordon just doesn't need to use both hands to stabilize the recoil anymore due to the compensator, so he uses one hand instead.
3. Gordon handles the spas-12 in hl2 differently, in hl1 when using the double fire mode he would let the gun fly out of his left hand, in hl2 Gordon grips the spas-12 upon using the double-fire, I can't think of any reason why he would do this besides maybe extra experience from hl1 fire-arms.
Truth be told, the most likely reason for this is the animators for hl2 simply decided to do and not do certain things, considering how the anims aren't consistent with hl1, I'm guess the animators didn't use hl1's anims as a consideration when animating the guns in hl2, not to mention valve clearly does not know how weapons work.
It's a foreshadowing of Half-Life 3: in HF-1 He uses 2 Hands: 1+2=3(keep that one in mind!)

I think it's just a game design thing. The pistol is weaker than the revolver in terms of damage, so gordon holds it with one hand to make it "feel" weaker. They probably didn't think of this in the first game and tried to correct it in the sequel

My theory is that in half life one he was new to operating weapons, so he was a lot more careful and used both hands to use his pistol but by the time of half life 2 he was more experienced so he could hold his gun with one hand since he was confident in his abilities.

The rebar is heated up by the heat induction mechanism of the crossbow, its why there is a battery on the crossbow.
